Bikini Recipe
Serves 10 guests
To make the Clementine Cordial (makes 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g fine sugar
Ingredients for the Premix (yields 850ml, enough for 10)
400ml premium vodka
100ml classic gin
150ml peach schnapps
200ml clementine syrup (see above)
Whole cranberries, to garnish
Mandarin essential oil, as a final touch
Directions
To prepare the Cordial: Put the listed items inside a pan, heat until it reaches a simmer, agitating to dissolve. Next, take off the burner and leave to cool entirely. Pour into a sealable bottle, seal keeping it in the fridge, it will last for around one month.
For the Premix: Mix the specified liquid ingredients into a sizeable container, allow it to infuse for one hour, then pass it through best through muslin, so it's perfectly clear.
To serve: Measure 85ml from the premix to a mixing glass packed with ice, gently stirring lightly for about 60 seconds until cold. Filter into a frosted cocktail glass or similar, decorate with some cranberries and complete it by giving it a brief mist of mandarin oil over the top.
